how to make perfect popcorn

how to make perfect sweet and salted popcorn

you will need -

about a handful of popping corn
a splash of vegetable oil
about a quarter of a cup of white sugar
a smallish splash of ricebran oil
about an eighth of a cup of water
salt

all measures are approximate because i've just been doing it by eye.

okay first of all you need to pop the corn so place all the popping corn in a medium saucepan with the splash of vegetable oil - make sure you put the lid on or it'll go all over the kitchen.

once its popped put half of it into a largeish saucepan and put salt on it (as much as you like)
then
put the water, ricebran oil (im sure other oils would work but thats what i've been using) and sugar into a frying pan - boil it until it reaches the 'hard ball' stage (this means that a small amount dropped into cold water will form a hard ball and 'snap' if you break it) this should take about ten minutes depending on how hot the hob is.
it should also be almost clear - you dont want to end up with toffee, just a sugar syrup.

once its done take it off the heat and quickly stir the remaining popcorn into it making sure to cover it as much as you can.
turn it out onto a plate or baking tray for a few minutes until its cooled down
then break up the stuck together bits and stir it into the ready salted popcorn

voila! perfect mixed popcorn.

if you want to keep it for later put it into an airtight container or plastic bag so it doesnt go sticky.

vegan dia los muertos cake


vegan chocolate cake

one and a quarter cups of plain flour
one cup of sugar
one third of a cup of cocoa powder
one teaspoon of bicarbonate of soda
half a teaspoon of salt
one cup of warm water
one teaspoon of vanilla extract
one third of a cup of vegetable oil or melted vegan margarine
one teaspoon of lemon juice or cider vinegar


mix all the dry ingredients together in a bowl with a fork
mix all the wet ingredients together in a separate bowl
then combine them quickly
cook at about 180C for half an hour or until a knife stuck in comes out clean.

for the icing

half a cup of sugar
four tablespoons of vegan margarine
two tablespoons of cocoa powder
two tablespoons of soy/rice/oat/nut milk
one teaspoon of vanilla extract


put everything apart from the vanilla into a saucepan and boil for two minutes
it'll look weird and gloopy but this is the desired effect!
make sure you stir it while its boiling and then take it off the heat
let it cool down for about two minutes
then beat in the vanilla and pour over the cake
it comes out kind of fudge like and sets quite quickly so spread it fast.

This is a story about my friend issie and me.
I had a dream in which we bought some fish and then raised them under the floor in my old house. Naturally it began to rain downstairs and so we had to release them - one of them was enormous and we flew on its back all the way to the sea....
at the end of the story we went home for cake.
